SPICY SICILIAN CHICKEN AND QUINOA

INGREDIENTS

  • 100 Gram chicken breast fillet (raw, chopped)

  • 25 Gram quinoa (uncooked)

  • 70 ml water (filtered)

  • 20 Gram brown onion (diced)

  • 50 Gram carrot (diced)

  • 1 garlic clove (minced)

  • 70 Gram canned italian crushed tomatoes

  • 10 Gram red chilli (chopped)

  • 20 Gram kalamata olives (whole)

  • 15 Gram sun dried tomatoes

  • Pinch Himalayan salt

  • Pinch Black Pepper

  • 2 ml olive oil

METHOD

  1. Boil water in a saucepan over medium temperate and cook the quinoa for 15 minutes or until it opens.

  2. Meanwhile heat olive oil in a non stick pan over medium temperature and saute the onion and garlic for few minutes. Add the carrots and chilli to the pan and cook for a few more minutes.

  3. Add the chicken and cook for several minutes stirring until the chicken is almost cooked through.

  4. Add the crushed tomatoes, Kalamata olives, sun-dried tomatoes and season with salt and pepper. Cook on low heat for about 10-15 minutes.

  5. Serve the spicy Sicilian chicken alongside the quinoa.
