SCRAMBLED BASIL TOFU ON TOAST

INGREDIENTS

  • 2 x (35g) wholegrain bread slices

  • 150g firm tofu

  • 10g basil, finely diced

  • 2 tsp. (10ml) olive oil

  • 30g baby spinach leaves

  • Himalayan salt & pepper


METHOD

  1. Toast bread slices to your liking. Set aside.

  2. Place the tofu in a bowl and using a fork, mash into small curds. Stir through diced basil.

  3. Heat oil in a large non-stick frying pan over a medium to high heat. Add tofu and cook until some liquid has released and tofu is slightly golden and cooked well, about 3 minutes.

  4. Add in spinach and stir through until wilted. Season with salt and pepper.

  5. Serve scrambled tofu on toast.
