2 large eggs
1 cup unsweetened applesauce
1 teaspoon vanilla extract
3 tablespoons honey
3/4 cup unsweetened almond milk
2 tablespoons melted coconut oil
2 cups rolled oats
1/2 cup white whole wheat flour (any kind of flour will work)
1 teaspoon baking powder
1 teaspoon ground cinnamon
½ teaspoon ground nutmeg
½ teaspoon ground ginger
1 tablespoon flaxseed meal
1 cup shredded carrots
½ cup golden raisins
⅓ cup shredded unsweetened coconut
First, preheat the oven to 350ºF then spray an 8×8-inch baking dish with nonstick cooking spray.
Add the dry ingredients to a large bowl and whisk until combined. Set aside.
Place all the wet ingredients (except for the coconut oil) to another bowl and mix until combined.
Slowly add the dry ingredients to the wet ingredients.
Add the coconut oil to the batter and mix.
Transfer the batter into the baking dish and bake at 350ºF for about 30 minutes or until the top begins to brown.
Remove from the oven and let cool before slicing and serving.
