LOW CARDB EGG AND HAM WRAP

INGREDIENTS

  • 3 free range eggs

  • 130g deli ham slices (all natural)

  • 3 cups baby spinach leaves

  • 1 tbsp. organic butter

  • 1 tsp. chives

  • 1 shallot, chopped


METHOD

  1. Crack the eggs into a bowl and whisk vigorously. Season with chives, Himalayan salt and pepper

  2. Melt butter in a non-stick fry pan over medium temperature and saute the shallots for a minute

  3. Pour the egg mixture into the pan and cook for 5 minutes, stirring occasionally

  4. Lay the cooked deli ham slices out on a plate

  5. Firstly divide the scrambled eggs and spinach between each ham slice and layer on one end of the ham

  6. Roll the ham, enclosing the filling

  7. Continue until all the ham slices have been filled with the spinach and scrambled eggs

  8. Serve
