Avocado, tomato and black beans on crusty sourdough toast sound like a tasty brekkie, all topped with fresh coriander and lime juice.


INGREDIENTS:

  • Canned black beans, rinsed, drained 1 cup(s), (175g)

  • Tomato(es) 2 medium, finely chopped

  • Avocado ½ medium, finely chopped

  • Lime juice 1 tbs

  • Fresh coriander 2 tbs, coarsely chopped

  • Wholegrain bread 4 slice(s), (4 x 35g slices) sourdough variety, toasted

INSTRUCTIONS:

  1. Combine beans, tomato, avocado, lime juice and coriander in a small bowl. Season with salt and pepper.

  2. Spoon bean mixture over toast.

NOTES:

TIP: Leftover black beans can be stored in a ziplock bag in the freezer.
