CURRIED SMASHED EGG ON BROWN RICE CAKES

INGREDIENTS

  • 2 eggs

  • 1 tsp. (5ml) olive oil

  • 1 tsp. curry powder

  • 5g dried coriander

  • pinch Himalayan salt

  • 30g brown rice cakes

  • 5 Gram hemp hearts/seeds

METHOD

  1. Boil water in a saucepan over medium temperature and cook the eggs for 7 minutes. Once cooked drain the water and rinse the eggs under cold water

  2. Tap the eggshells using the back of a spoon and peel the shell off. Transfer to a bowl and add in olive oil. Mash with a fork.

  3. Add in curry powder and coriander and stir through. Season with Himalayan salt and pepper.

  4. Spread over brown rice cakes. Sprinkle with hemp seeds.

  5. Serve
