INGREDIENTS

  • 15 ml coconut oil (melted)

  • 5 ml vanilla extract

  • 80 Gram banana (mashed)

  • 60 Gram rolled oats

  • 15 Gram almond meal

  • 20 Gram chia seeds

  • 15 Gram Vanilla Protein Powder or Vegan alternative

  • 2 Teaspoon cinnamon

  • 0.5 Teaspoon baking powder

  • 15 ml water

  • 50 Gram frozen blueberries


METHOD

  1. Preheat oven to 180°c and line a small baking dish or loaf tin with baking paper.

  2. Add coconut oil, vanilla extract, and banana to a bowl and mix until well combined.

  3. Add in oats, almond meal, chia seeds, protein powder, cinnamon, and baking powder. Mix until well combined. And in water and stir through. Allow batter to sit for 10 minutes so that chia seeds have time to expand. Gently stir through blueberries.

  4. Add batter to the lined baking dish and spread into an even layer. Place in the oven and cook for 35-40 minutes, or until cooked through.

  5. Cut into 4 squares and allow to cool.

  6. Serve 2 squares for breakfast and refrigerate the remaining squares for tomorrow's leftovers
