INGREDIENTS

  • 2 free range eggs

  • 35g avocado, chopped

  • 20g red onion, diced

  • 8 cherry tomatoes, chopped in half

  • 40g fresh basil, chopped

  • 10ml (2 tsp.) extra virgin olive oil

  • 1 tsp. dried thyme

  • 1 tsp. dried parsley

  • 1 tsp. turmeric


METHOD

  1. Crack the eggs into a bowl, and whisk vigorously. Stir in the thyme, parsley, and turmeric

  2. Heat a non-stick fry pan at medium temperature and pour the egg mixture into the pan and cook for 3 minutes or until it begins to set underneath

  3. Fold the omelette in half and remove from the heat. Transfer to a serving plate

  4. Combine the avocado, onion, tomato, and basil in a bowl. Drizzle the olive oil over the top

  5. Pour the avocado bruschetta over the omelette

  6. Serve
